Best Homemade Healthy Egg Salad Breakfast Recipe is our today’s recipe. This recipe is just awesome and of course, mouth-watering.

On my daughter’s 11th birthday,  we cooked all items on our own for guests. It was just her request and fun. I created it from my imagination at the time, and it was quite lovely. All kids loved it and happy.

You can make this Egg Salad recipe of your own choice. Even you can garnish or decorate this by adding or removing vegetables. But I like this recipe. Actually, I love to make anything in a different way. Sometimes it feels good, sometimes not.

About the Egg

The zygote is contained in an egg, which is an organic vessel. Fertilization of an egg cell produces an egg. We all know that egg is very much essential for our health. Reptiles, as well as most fish, amphibians, insects, and other invertebrates, can lay eggs that are even smaller. But here we tell about  chicken and duck egg.

Benefits of eating an egg in Egg Salad

Eggs are a low-cost, high-quality protein. The egg white has the highest quantity of protein, as well as vitamin B and less fat than the yolk. Selenium, vitamin D, B6, B12, and minerals including zinc, iron, and copper are all abundant in eggs.

Can we eat an egg every day?

Previously it was a myth that egg increases cholesterol. So, do not egg every day and avoid the yolk of the egg. But after long research, The American  Journal of Clinical Nutrition published in January 2020 that taking an egg every day neither increase cholesterol nor the risk of stroke, heart attack or premature death. But you can take only a full boiled egg every day.

Ingredients used to prepare Egg Salad

I use chicken eggs, potato, mayonnaise, salt, sugar, black pepper, onion, cucumber, tomato, coriander leaves, mint leaves, lemon, red capsicum, green capsicum and yellow capsicum. All ingredients have separate nutritional value and good for our health. Any kind of salad itself very healthy for our health, mind and eyes. You can add more vegetables for more flavour and also can remove the vegetables. Nutritional value of some ingredient –

Why we take Egg Salad?

Egg Salad is basically boiled egg with varieties of vegetables. The egg itself has high protein, vitamin B, D, B12, B6, iron, zinc and minerals. On the other side, Vegetables have a high quantity of vitamin E. So the combination of egg and vegetables make us healthy. It maintains the balance of food, vitamin and minerals.

Directions

Preparation of yummy Egg Salad is hassle-free and very easy. Simply focus on the shape of a boiled egg. The shells of the eggs should be removed and the eggs should be separated into two equal pieces. The texture of the salad is mostly determined by the garnishing.

Step 1

Pour water into a saucepan. Add eggs and potato to the water and boil on a high flame.

Step 2

After thoroughly cook of potato and egg, turn off the gas and keep them aside for cooling.

Step 3

In the meantime, we prepare the salad for garnishing. Cut onion, tomato, cucumber, green capsicum in a thin round shape. Cut yellow and red capsicum in 1-inch finger size.

Step 4

Peel off the potato after become cool. Finely shred the eggshell. Cut the egg vertically into two pieces. The egg yolk should be delicately separated from the inside of the egg.

Step 5

Smashed the potato. Add egg yolk, mayonnaise, salt and pepper. Now combine everything thoroughly. The mixed paste will be smooth and soft.

Step 6

Now take some potato egg yolk mix and fill the middle portion of the egg. There should be no difference in the proportions of the ingredients. The mixture should be placed in the same spot as the egg yolk.

Step 7

Now take a plate. Put all eggs diagonally on the plate or according to your choice. Place cucumber, onion, tomato and green capsicum one by one. Place yellow and red capsicum at the centre of the green capsicum. Add chopped coriander on the top. Lemons should be placed in two corners. Keep a mint leaf on the egg in the middle.

Step 8

Yummy Egg Salad is ready to serve. Serve it with your breakfast or as an evening meal.
