Sorse Ilish Bhapa – A famous Bengali style recipe for fish lovers. Bengalees are very much fond of fish, especially Ilish fish and Chingri fish (Prawn/Shrimps).

In the rainy season, you can not find any Bengali without Ilish preparation in their house. In fact, several Ilish Festivals are conducted in West Bengal in this season.

Our Journey for Ilish Fish

Kolaghat is one of the famous places where quality Ilish fish are available. Ilish from the Padma river of Bangladesh is also available here at wholesale price. I with my friends used to take a car and go out in the early morning to get Ilish fish from Kolaghat. Those were lovely days.

About the Ilish Fish

The Ilish fish is also known as Hilsa fish. It is a fish in the Clupeidae family that is related to herring. In the Indian Subcontinent, it is a very popular and sought-after food fish. Bangladesh’s national fish is the Ilish.

Ilish is high in good-quality fatty acids and Omega-3, which protect individuals from coronary heart disease. The body length can exceed 60 cm, however, most specimens are between 35 and 40 cm. A huge Ilish fish weighs approximately 2.5 kilogrammes. A big female can lay up to 2 million eggs in her lifetime.

Tips for Sorse Ilish Bhapa

⇔ Use mustard oil for this recipe. Mustard oil is required for some special preparations for its strong smell.

⇔ Green chillies add a spicey flavour.

⇔ Ilish fish is soft. So do not use enough water to wash it.

⇔ The softer the chilli becomes, the more water you soak it in. The paste will also be smooth.

⇔ Do not forget to pour mustard oil over the fish before the microwave. It strengthens the flavour and smell.

Alternate Method of preparation

This preparation can be made by not using the micro-oven. Use a steel tiffin box with a lid. Keep all fish and paste in the tiffin box in the same way. Keep the tiffin box in a half-water filled Kadai and boil for 15 minutes

Directions

For the rainy season, Sorse Ilish Bhapa is perfectly suitable. This dish can be prepared in either a micro-oven or a Kadai. In both cases, the procedure is the same. Fish is a favourite food of Bengalees. Very simple to prepare and does not necessitate a large number of components.

Step 1

Cut the fish according to your requirement. Wash the fish thoroughly. Do not use so much water to clean the fish. Keep the fish aside.

Step 2

Soak black mustard and 2 green chillies in a bowl with one cup of water for 10 minutes.

Step 3

Take a mixer jar and put the soaked black mustard and green chillies. Make a smooth paste out of it.

Step 4

Using a sieve, sift the paste. Make sure that there are no black crumbs in mustard.

Step 5

Add turmeric powder, salt, Kashmiri red chilli powder and 1/4th cup of water in the paste and mix well.

Step 6

Take a micro-oven cooking glass plate. Pour 2 tbsp mustard oil and evenly spread it on the plate.

Step 7

Put all fish pieces on the plate. Pour the black mustard paste evenly over the fish.

Step 8

Turn the fish and mix well the paste.

Step 9

Slice the remaining green chillies lightly. And put over the fish.

Step 10

Pour remaining mustard oil on the fish.

Step 11

Microwave for 15 minutes. In between, turn the fish by using a ladle.

Step 12

Remove the plate from the microwave.

Step 13

Sorse Ilish Bhapa is ready to serve. Serve it with hot steamed rice.
